When Disney’s Hollywood Studios theme park was built, it was to be all things, well Hollywood. So to create a Hollywood inspired park, you need iconic Hollywood, which includes a clone of famed Hollywood eatery, the Brown Derby Restaurant with classic movie decor and the famous Cobb salad.

The Hollywood Brown Derby Restaurant is tops for dining at Hollywood Studios. In fact, although Disney’s Hollywood Studios has undergone many changes and barely resembles what it was originally, The Brown Derby Restaurant is one of the remaining original ideas from the day Hollywood Studios opened.

What do you pair with original creations such as blue lump crab springs rolls, Scotch maple-glazed Loch Duart Salmon and pan-seared, coriander-crusted black grouper? Pastry Chef Andreas Born created this Banana Toffee Mousse on Cocoa Crunch. 

This elegant dessert is amazing. It was created for Disney’s holiday menu at The Hollywood Brown Derby.  A wonderfully, sinful mousse that is divine in taste. This Disney dessert is magnificent!

Banana Toffee Mousse on Cocoa Crunch

Banana Toffee Mousse on Cocoa Crunch is a dessert that is served up in Disney's Hollywood Studios signature restaurant, The Hollywood Brown Derby.  Introduced in 2014 for the holiday seasons, this pastry created by Pastry Chef Andreas Born is a trifecta of deliciousness!

Ingredients

  • 1 cup white chocolate chips
  • 2 eggs
  • 2 egg yolks
  • 1 1/2 tablespoons sugar
  • 1 tablespoon powdered gelatin
  • 2 tablespoons water
  • 1 1/2 medium bananas, peeled and mashed
  • 1 1/2 cups heavy cream
  • 12 tablespoons crushed chocolate cookies
  • 1/2 cup chocolate-covered toffee pieces

Instructions

    1. Place white chocolate chips in a heatproof bowl set over a small saucepan of simmering water, making sure bottom of bowl does not touch water.
    2. Melt chocolate, stirring frequently. Remove from heat and set aside.
    3. Place eggs, egg yolks, and sugar in double boiler over simmering water; whisk for 4 minutes and remove from heat.
    4. Sprinkle gelatin over hot water in a small bowl and set aside for 5 minutes.
    5. Microwave 10 seconds, stirring gelatin until melted. Set aside.
    6. Beat eggs and sugar together in the bowl of an electric mixer until fluffy.
    7. Stir in gelatin mixture, then mashed bananas. Fold in melted white chocolate.
    8. Whip heavy cream to soft peaks in a separate large bowl.
    9. Gently fold whipped cream into banana mixture to create mousse. Divide mixture in half.
    10. Spoon 1 tablespoon chocolate cookie crumbs in the bottom of 12 1/2-cup ramekins.
    11. Evenly top each with half of mousse.
    12. Add thin layer of toffee pieces. Repeat process with remaining mousse.
    13. Refrigerate at least 2 hours before serving.
