[intro]Cobb salad was invented at The Brown Derby in California. When Disney decided to add the legendary Brown Derby Restaurant to MGM Hollywood Studios, the famous Cobb Salad was of course put on the menu![/intro]

Cobb salad history

When you visit Disney’s Hollywood Studios, there is a Brown Derby restaurant in the park. It is exactly like the legendary Brown Derby in California. Of course, the signature dishes from The Brown Derby has to be on Disney’s menu.

This includes the famous Cobb Salad. What is cobb salad history? Why is the Brown Derby part of the salad’s history?

1937 at the Hollywood Brown Derby restaurant, where it became a signature dish. It was named after the restaurant’s owner, Robert Howard Cobb. The legend is that Cobb had not eaten until near midnight, and so he mixed together leftovers he found in the kitchen, along with some bacon cooked by the line cook, and tossed it with their French dressing.

Original cobb salad dressing recipe

When I dined at Disney’s Brown Derby and had the famous Cobb Salad, the dressing surprised me. I knew French dressing is what is used on a Cobb Salad recipe. However, the French dressing they served was very different then what I was used to.

The original cobb salad dressing recipe is not this bright red I am used to seeing in bottles in the stores. The color was more of a brownish color.

Plus the cobb salad dressing did not have the tangy tomato-like taste either. I actually liked the original cobb salad dressing recipe much better than the bottled French dressing I was used to!

When you dine at Disney’s Hollywood Brown Derby, you do feel like a celebrity. With warm wood-paneling and celebrity caricatures, The Hollywood Brown Derby harkens back to the Golden Age of Hollywood. 

Making the Cobb Salad recipe at home helps bring back those wonderful Disney memories. Plus it just a great dinner salad as well!

Cobb Salad with French Dressing {Hollywood Brown Derby}

Cobb Salad with French Dressing {Hollywood Brown Derby}

The legendary Brown Derby Restaurant at Disney's Hollywood Studios has the famous Cobb Salad, Now you can make this Disney recipe at home.

Ingredients

Salad

  • 1/2 head iceberg lettuce
  • 1/2 bunch watercress
  • 1 small bunch chicory
  • 1/2 head romaine lettuce
  • 2 medium tomatoes, blanched & peeled
  • 1 1/2 cups cooked turkey breast, diced
  • 3 eggs, hard-cooked
  • 1/2 cup blue cheese, crumbled
  • 6 strips crisp bacon, crumbled
  • 2 tablespoons chopped chives

French Dressing

  • 1/2 cup water
  • 1/2 teaspoon sugar
  • 1 1/4 tablespoons salt
  • 1 1/2 teaspoons Worcestershire sauce
  • 1 clove garlic, chopped
  • 1/2 cup red-wine vinegar
  • Juice of 1/2 lemon
  • 1/2 tablespoon ground black pepper
  • 1/2 teaspoon English mustard
  • 1/2 cup olive oil
  • 1 1/2 cups salad oil

Instructions

For the Dressing

  1. Blend all ingredients except oils.
  2. Then add olive oil and salad oils and mix well.
  3. Blend well again before mixing with salad.


Cobb Salad

  1. Chop all greens very fine (reserve some watercress for presentation) and arrange in a salad bowl.
  2. Cut tomatoes in half, remove seeds and dice fine.
  3. Also dice the turkey, avocado, & eggs.
  4. Arrange the above ingredients, as well as the blue cheese and bacon crumbles, in straight lines across the greens.
  5. Arrange the chives diagonally across the above lines.
  6. Present the salad at the table, then toss with the dressing.
  7. Place on chilled plates with a watercress garnish.
