Brown Derby Hollywood
When you go to Hollywood, that is Disney’s Hollywood Studios, you need to eat at The Brown Derby restaurant. But to appreciate Disney’s Brown Derby restaurant, we need to learn about the original Brown Derby Hollywood.
The Brown Derby was the name of a chain of restaurants in Los Angeles, California. The most famous of these was shaped like a man’s derby hat, an iconic image that became synonymous with the Golden Age of Hollywood. The chain was started in the 1920s.
Hollywood Studios restaurants
When Disney decided to build MGM Disney Hollywood Studios theme park, which was the original name before became just Disney’s Hollywood Studios, it needed themed dining places. The Hollywood studios restaurants needed signature dining that said this is Hollywood.
Disney’s Brown Derby
What says Hollywood, like the iconic Brown Derby restaurant. How did Disney’s Brown Derby come to be? The original Brown Derby restaurants had closed but a Disney-backed Brown Derby national franchising program revived the brand. The Brown Derby licensing program began in 1987 with an agreement with The Walt Disney Company for a replica of the original Hollywood Brown Derby restaurant.
Disney’s Brown Derby is so popular that in 1990, the Walt Disney Company entered into three additional agreements for the Walt Disney Movie Studios at Disneyland Resort Paris, Tokyo Disney Sea at Tokyo Disney Resort and Disney California Adventure Park at Disneyland Resort in Anaheim, California.

Brown Derby is known for as the birthplace of the Cobb Salad with French Dressing and the grapefruit cakeAlso the soups like the oyster brie soup. The oyster brie soup was a very popular item to get on the Hollywood Brown Derby menu. Like most popular Disney menu items, it was retired. To bring us back to the magical Disney dining memories, this Disney recipe still lives on!

Oyster Brie Soup {Hollywood Studios Brown Derby}
This Disney soup recipe was served at Hollywood Brown Derby at Hollywood Studios in Disney World. Retired from the Hollywood Brown Derby menu, it still is a Disney favorite recipe
Ingredients
Soup
- 6 oz brie
- 48 oz half and half
- 6 oz roux, cold*
- 2 oz fish base
- 1 cup Champagne
- 8 oz Oysters
- 8 oz Oyster juice
- Salt and white pepper to taste
Roux
- 1+2/3 lb butter
- 1+3/4 lb all-purpose flour
Instructions
Roux
- In a saucepan, melt butter.
- Slowly add flour, stirring constantly to avoid lumps.
- Cook 10-20 minutes (med-low heat). Roux should be smooth with an almond aroma.
- Quickly remove from heat.
Oyster Brie Soup
- Put half and half in a thick bottom pot.
- Heat nearly to boil.
- Add roux to thicken, simmer 10 to 15 minutes.
- Add brie, stirring constantly to melt.
- Add fish base, strain and return to pot.
- In a separate pot, cook oysters in their own juice.
- Strain mixture into first pot, then add cooked oysters, juice and champagne to the mixture.
- Add salt and white pepper to taste.
