Epcot’s Mexico

Mexico is a permanent pavilion in Epcot’s world showcase. Most people use Mexico as a meeting place for loved ones because the pyramid is very easy to see. Also, Mexico is the first country of Epcot’s World Showcase if you go to the left of the International gateway. 

Since Mexico is a permanent fixture in Epcot, the food for Epcot’s festivals have to be amazing. Mexico does not disappoint when comes to the flavors!

2014 Food and Wine Festival

I do have a few recipes from the 2014 Food and Wine Festival, like Nueske’s® Pepper Bacon Hash {Food and Wine Festival 2014}. 2014, Epcot’s food and wine menu are really stood out. What was the 2014 food and wine festival menu for Mexico that year? It took some digging but I located the menu with prices for 2014:

  • Shrimp taco: Fried shrimp, pickled habanero pepper and onions on a flour tortilla – $5.50, DDP Snack Eligible
  • Ribeye taco: Marinated rib eye, roasted chipotle salsa and grilled scallions on a corn tortilla (gluten-free) – $5.50, DDP Snack Eligible
  • Sweet corn cheesecake: $3.50, DDP Snack Eligible; Vegetarian
  • Dos Equis Beer: $3.75
  • Sangria: $6.75
  • Tequila Flight: $12.50
  • Mango-strawberry margarita: $8.50

Sweet Corn Cheesecake

It was the Sweet Corn Cheesecake that really stood out on Disney’s Mexico 2014 menu. A creamy cheesecake that was made with sweet corn, it is a wonderful Mexican dessert. 

Just the word, “cheesecake” will make anyone drool over the mention of this dessert. Mexico makes this Sweet Corn Cheesecake unique. Corn is naturally sweet, so adding it to a cheesecake really brings a cheesecake recipe to a new level.

This Mexican dessert really was a great way to introduce people to Mexican cuisine you may not have known about. That is what is so wonderful about Epcot’s International Food and Wine Festival, you can try various culture’s food and wine!

Sweet Corn Cheesecake

Sweet Corn Cheesecake

Cook Time: 1 hour
Additional Time: 2 hours
Total Time: 3 hours 10 minutes

Sweet Corn Cheesecake was the dessert favorite of Epcot's 2014 Food and Wine Festival in Mexico. This sweet Mexican cheesecake was a surprising hit!

Ingredients

Crust

  • 1 pound crushed graham crackers
  • 1 stick (4 oz) unsalted butter

Cheesecake Filling:

  • 1 8 oz package of cream cheese, at room temperature
  • 1 can (14 oz) sweetened condensed milk
  • 1 can (12oz) evaporated milk
  • 2 cans (12 oz each) sweet corn, drained of excess liquid
  • 6 tablespoons unsalted butter, at room temperature
  • 3 eggs

Instructions

  1. Preheat oven to 335° F.

Crust

  1. Spray an 8-inch springform pan with cooking spray.
  2. Melt butter.
  3. Mix with the graham crackers and press into the bottom of the pan, covering the bottom and sides.
  4. Set aside.

Cheesecake Filling

  1. In the bowl of an electric mixer fitted with a paddle attachment, beat cream cheese and butter until fully combined and soft.
  2. Add sweetened condensed milk, scraping down sides to make sure the mixture is fully blended.
  3. Add eggs, one at a time, scraping down sides after each addition to make sure the mixture is fully blended.
  4. Add in evaporated milk a little at a time, scraping the bowl down often.
  5. Add corn to the mixture. Blend all ingredients and pour into the springform pan.
  6. Bake for 45 minutes to 1 hour, or until just set.
  7. Cool cheesecake until it reaches room temperature.
  8. Chill for at least 2 hours before serving.
